Greek Salad

This one is so easy, and such a crowd pleaser!  Make sure to follow the directions exactly, especially the wait time for the tomatoes and onions.


1 med red onion, sliced thin
2 T red wine vinegar
1 T oregano
1/4 tsp pepper
3 large Roma tomatoes, sliced thin
1/2 tsp sugar
1/4 tsp salt
1 large head romaine lettuce, torn into bite-sized pieces
2 T thin sliced fennel (use more or less to taste)
1/2 c olive oil
2 T fresh lemon juice
1/2 c pitted kalamata olives
1/2 c crumbled feta cheese


Sprinkle onion slices with vinegar, oregano, and pepper, and leave to rest, covered, on counter for 1 hour.

In a separate bowl, sprinkle tomato slices with sugar and salt, covered, and leave to rest 1 hour.

Toss together lettuce, fennel, olive oil, and lemon juice. Top with onions, tomatoes, olives, and feta, and gently re-toss to combine.
